Among our Hungarian sturgeons, our sturgeon, which has only switched to a freshwater lifestyle, migrates only to spawning grounds. Thanks to the natural aquatic plantations and the life force of the species, the herring population is still significant in the larger rivers of the Carpathian Basin. Our smallest-growing but most delicious sturgeon, which once had great gastronomic significance, as in addition to its fibrous meat, caviar made from its eggs is the most delicious.

The Carpathian Basin has been a rare guest since the Middle Ages, although research has shown that migratory and non-migratory populations can be found in the larger rivers of Central and Eastern Europe, and some of them are still found today. With its spectacular but sharp armor, it is perhaps our most beautiful sturgeon. Its flesh is as tasty as its veal, and its eggs are very important in the production of caviar in the world. Due to its size of 80-100 kg, its repatriation in Hungary, in addition to nature conservation, would also provide a great experience for anglers.

The largest freshwater fish species. It is a predatory case that, with a size of more than 1 ton, has been the subject of astonishment since ancient times. Its delicious meat and eggs, but in the past even its floating bladder, were of extraordinary value, and therefore they played a decisive role in the life of Hungarian river fishing. By the end of the Middle Ages, thousands of these giants migrated to their drinking places in today’s Szigetköz every year. Our lords once gave whole serf villages for the famous water catchment places around Komárom. Today, their newsletter has not remained on the Danube section of our country either, but the nature conservation installations give hope for their return. Caviar made from its eggs is still the most expensive fish product today!

One of our most greedy, perhaps the most aggressive fish, to the great delight of anglers, as it caters to almost everything, from small fish to lures to frogs… It tolerates very hot and oxygen-deficient waters, which is becoming increasingly important due to today’s extremely hot summers becomes. The snow-white flesh of its specimens, which has grown to several kilograms, is a real gastronomic delicacy worldwide.

This is an extremely tasty meat of perch, originally from Central and Eastern Europe, and has now been introduced to the whole of Europe and even North Africa. It is also widespread in Central Asia through plantings, where it is also one of the most valued fish species. It is sensitive to oxygen deficiency, stress effects and water pollution, and its cannibalism is significant in its offspring, but due to its high value, its breeding is a priority throughout the country. It can also be caught with lures and fish slices, but in addition to anglers, it is also a priority for the catering industry. The hanger on Lake Balaton has been a special concept in Hungary for hundreds of years, not by chance!
